Mustard Pork Chops

Father’s Day is coming up and I would definitely recommend this delicious meal.  If you have the opportunity to grill these chops, I would go for it. I found two fresh pork chops for around $2.50. I served them with some cabbage salad and made a delicious dinner for two for about $4 a piece. Talk about a bargain.

If you’re going to grill them, Start by seasoning with a little kosher salt and a pinch of garlic powder. I don’t like to use too much pepper in this recipe. I have tried a light dusting of cayenne or even paprika tastes pretty awesome.  I added a few teaspoons of oregano too this time. 

Next, mustard. I have tried a few different varieties. I love yellow or honey mustard. Whole grain mustard is a nice flavor too. You do want to add a little bit of sweetness so if you do you regular mustard, I like to add a tablespoon of honey or brown rice syrup. Maple syrup or agave nectar would be really good too.

Depending on the thickness of your chops, I’m going to recommend about 5 minutes of grill time on each side on medium high heat.  I baked my chops at 375 degrees and they took 45 minutes. I start by seasoning the chops, mixing up some mustard sauce and drizzling it on and then and baking them. You can easily pan fry the chops. Start by giving them a good sear on high heat to caramelize the outside with some olive oil and then  add some braising liquid like apple cider, chicken broth or pork stock and cook for 7 to 10 minutes on medium high heat. As for grilling, I would add the sauce either after you flip them and let the sauce cook or you can drizzle the mustard sauce on top of the hot pork chop.

 

Peaches and nectarines go really well with the chops as a garnish or an added extra. Enjoy!

 

 

 

 

 

 

Chef Julie's Mustard Sauce

A tangy and sweet sauce that is really good with grilled chicken or fish.

Ingredients

  • 3/4 cup mustard yellow, whole grain or honey mustard
  • 1/2 tsp salt
  • 1 tsp dried oregano
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 cup milk
  • 2 Tablespoons olive oil
  • 1 Tablespoon honey or maple syrup, brown rice syrup or agave nectar

Instructions

  1. Mix all ingredients together in a bowl and drizzle on the meat. It can be added prior to baking or add to a sauce pan, warm slightly and drizzle over cooked meat. 

Recipe Notes

If you're going to use honey mustard, you will want to only use 1/2 Tbsp added sweetener.
