Oats & Nut Butter Bites

I really love peanut butter and any excuse to sneak it in for a snack is perfect. What I love about this recipe is that there are changeable options for some of the ingredients. If you are someone who is allergic to peanuts or if you live with someone who is, you can always substitute another nut butter like almond butter or the mixed nut butter which is made from walnuts, almonds and cashews. Also, if you want a nut free snack, you can certainly make these with sunbutter too. Sunbutter is found in almost every grocery store now.

The biggest trick to making these great is the chill time. It’s important to make these ahead so that they have some time to bind together. Another great part about this recipe is that it is adaptable to use options from your pantry. The ingredients can be changed up. The dried fruit doesn’t have to be raisins. Other delicious choices could be dried mango or dried apricots. Just make sure they dried with no added sugar.

Oats & Nut Butter Bites

This recipe is a no bake oatmeal & nut butter bites. that contains honey and dried fruit.

Chilling Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 2 cups quick cooking oats Dry. Do not cook. Do not put in water.
  • 2 Tbsp sunflower seeds
  • 1/4 cup dark chocolate chips
  • ¼ cup craisens dried cranberries
  • ¼ cup raisins
  • 2 tsp flax seed
  • ½ tsp salt
  • 1 Tbsp pumpkin spice powder This is a mixture of spices. Plain cinnamon powder works too.
  • ½ tsp vanilla extract
  • 2 Tbsp honey
  • cups peanut butter chunky – Almond Butter or Sunbutter works too.

Instructions

  1. In a medium sized mixing bowl, pour in the oats, raisins, flax seed, craisins, chocolate chips, salt, pumpkin pie spice and sunflower seeds together for 10 seconds to blend with a spoon.

  2. To the oat mixture, add in the honey, vanilla extract and peanut butter and with clean fingers or a spatula mix together until all ingredients are covered with the peanut butter and everything is blended. I found that a little cooking spray sprayed on my measuring cup helps the peanut butter to come out of the measuring cup. Likewise a little cooking spray on your stirring spoon or spatula will help the peanut butter not to stick as much and blend better into the oatmeal.

  3. When all of the oats are coated with the honey and peanut butter and the mixture is blended together well, chill the mixture for 30 minutes in the refrigerator. This is a necessary step. This needs to happen BEFORE you roll the mixture into the bites.

  4. Lay out a plate or a sheet pan or a cake pan that you can lay out the snack bites on while you roll them out. After the oat mixture is chilled, roll out the bites into small soup spoon sized balls and lay them out on the plate or pan. Try to keep them separate so they aren't touching so they don't stick together.

  5. Chill the snack bite balls for another 30 minutes and then enjoy. This is a necessary step to really firm everything together and to let all the flavors blend together.

  6. These are easy to store in a ziplock bag or tupperware if you follow the chill steps. Keep refrigerated for best flavor. Enjoy!
