Pumpkin & Oatmeal Cookie Bites

Hi Friends! I was looking for something yummy but small and I came up with these lil’ oatmeal bites. I added pumpkin because it’s still pumpkin spice season and I happened to have it on hand. (of course!)

I love this cookie so much for so many reasons. It’s a two bite treat when you want just a little something extra. It’s a good treat for little ones because it’s small. Oatmeal is also filling.

Next, this is super quick to put together. A very standard recipe as far as cookies go and they bake up in just 12 minutes. They are chewy and a little sweet and very seasonal. The delicious smell that wafts through your kitchen is worth any and all effort to make these at home.

If you wanted to bring a quick potluck treat to your coworkers or your children’s holiday party, these would be a great choice because they make approximately 20 cookies.

Pumpkin Oatmeal Bites

A small drop cookie that is a perfect little seasonal bite.

Ingredients

  • 1/2 cup butter softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 each large egg
  • 1 tsp vanilla extract
  • 1 cup AP Flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/3 cup pumpkin puree
  • 1 1/2 cups quick cooking oats

Instructions

  1. Preheat an oven to 350°F.

  2. Line a large baking sheet with foil or parchment paper. Spray with non stick cooking spray.

  3. In a medium size mixing bowl, cream together the sugars and butter with a hand mixer.

  4. Add the egg and mix again for 10 seconds to incorporate.

  5. Add in the vanilla extract and pumpkin puree and give the whole mixture a few stirs with a spoon to incorporate.

  6. In a second bowl, mix the flour, salt, cinnamon, pumpkin pie spice, baking soda and oats. Stir with a spoon for 15 seconds to combine.

  7. In batches, mix the dry ingredients into the wet ingredients stirring in between additions. Do not over mix. You want to just make sure everything is incorporated.

  8. With a large spoon or a medium sized (about 2oz) scoop, scoop the batter and drop onto the baking sheet. Use the back of the spoon to flatten the cookie just a little bit.

  9. Bake for 12 minutes and cool completely before eating. Enjoy!
