Sea bean And Fried Tomato Salad
In my local farmer’s market this weekend I tried something delicious that I had never had before. They are called sea beans. Beautiful little plants that look like immature succulents but taste a bit like salty beans. I hope that sounds appetizing because truthfully they are great. They are not overly salty but they do grow next to the ocean. I’ve read they also grow near other water sources

You will absolutely love this unique salad. It happened to be one I threw together with the unique ingredients I found. Its so much fun when you can find something new and get creative with it. I read that sea beans are great in a fritata. I have a quiche crust waiting to be baked so perhaps that is what to do with the extras. This variety I have are such a dark rich attractive green color.
It was an adventure to throw this salad together. This is one you must try. Since its berry season, you should be eating as many as you can. Find some greens that you just love and then start adding things. I had just made some fried green tomatoes which I added to my salad in place of a crouton. Then, the other unique ingredient, sea beans. I topped this salad with a balsamic vinaigrette and called it lunch. You could certainly add shredded chicken or tofu chunks for protein. I think shredded carrots would look beautiful in here too.

Sea bean And Fried Tomato Salad
A unique salad with summer ingredients.
Ingredients
- 3 cups greens- romaine, spring mix or kale chopped
- 1/2 cup blueberries
- 3 Tablespoons balsamic vinaigrette

- 1/4 cup chopped seabeans
Instructions

Put the chopped spring mix on a plate and add the blueberries and sea beans. Top with balsamic vinaigrette and garnish with the tomato. Enjoy!
